Food


I have no idea what this is called, but I know it was delicious. I came home from work last night and was starving, but had no obvious meals to prepare, so I threw this together:
I used leftover pocket bread from Sunday (beginning to stale, but still delicious), scrambled up some eggs in olive oil with a little basil, garlic salt, and pepper, and heated up some black beans with a little garlic and onion.
Then I piled the eggs and beans on the bread and topped it with some shredded colby jack cheese, and voila! Yummy dinner. Sometimes I love using random stuff I have lying around.

What a great idea. I think I may try it. Basil on eggs, hmm...

I've been putting basil in my eggs a lot lately. It tastes good in omelettes and fritattas too.
